Cool off with these healthful ice pops (recipe)

Frozen fruit pops are a staple of summer. Why limit yourself to the store-bought options when you can freeze your own rainbow of fruity flavors at home? These three ice pop recipes will help keep you cool while providing your recommended five fruits and vegetables a day.

Fruity Coconut Pops

Use fresh, in-season fruit for a simple and tasty treat.
Yields 8 servings

Ingredients
2 cups whole or diced fruit
1 11-ounce carton coconut water

Directions
Place whole or diced fruit into an ice pop mold or paper cup. Mix and match fruits for different colors and flavors. Add coconut water to fill line, or within a 1/2 inch of the top of the mold. Insert stick and cover, if needed. Freeze for 4 hours or until coconut water is frozen.

Green Smoothie Pops

Double your morning smoothie batch and enjoy the leftovers as a mid-afternoon snack.
Yields 8 servings

Ingredients
2 cups leafy greens (spinach, kale, chard)
2 cups green fruit (green apples, kiwis, pears, grapes)
1 banana (optional)
1/2 cup pineapple (optional)
2 cups water

Directions
Add ingredients to blender and blend until smooth. Add more water if needed. Pour into molds or paper cups, within a 1/2 inch of the top of the mold. Insert stick and cover, if needed. Freeze for 4 hours or until firm.

Fruit and Yogurt Pops

Use low-fat or fat-free yogurt for a healthier, protein-packed pop.
Yields 6 to 8 servings

Ingredients
12 to 16 ounces plain Greek or regular yogurt
2 cups fruit (raspberries, oranges, apricots, bananas, kiwis and blueberries 
are great options) 
1 tablespoon honey (optional)

Directions
Add ingredients to blender and blend until smooth. Pour into molds or paper cups, within a 1/2 inch of the top of the mold. Insert stick and cover, if needed. Freeze for 4 hours or until firm.
