This salad is a healthier version of the traditional Mexican salad, but with none of the guilt.

HMR® Southwestern Salad
Yields 1 serving
1 HMR® Mexican-Style Bean and Beef Enchiladas entree
3 cups of lettuce or mixed greens
1/2 cup corn
1/2 cup salsa (no sugar-added varieties are best)
1 cup diced tomatoes
1 tablespoon fat-free sour cream
Heat up the corn. Microwave entree for 1 to 1 1/2 minutes, and then cut into bite-sized pieces. Layer the ingredients in the following order: lettuce, entree, corn, salsa and diced tomatoes. Top with sour cream.
