How to chiffonade fresh herbs (video)

June 2, 2016

There are many ways to prepare fresh herbs as an ingredient or dish topper: you can chop, slice, dice or muddle, to name a few. In this video, Sharp Grossmont Hospital’s Chef Larry Banares shares his favorite technique: the chiffonade. The French term literally means, “made of rags,” to recognize the long strips of basil or other leafy herbs that result from this rolling and mincing process.

Chef Larry uses fresh basil in his savory Roasted Red Pepper and Eggplant Soup recipe. Find more recipes from Sharp Health News.
