Lentil bruschetta dip

Bruschetta offers many health benefits that are common with most Mediterranean dishes. It’s high in antioxidants, fiber and good, monounsaturated fats — all of which can help protect against many diseases, including certain cancers and heart disease.

Simple to prepare, this bruschetta recipe features lentils, adding extra fiber to your diet.

Lentil Bruschetta Dip
Enjoy as a healthy appetizer, snack or light lunch.
Yields 6 servings

Ingredients
1 package steamed lentils (or soak and steam your own)
1 container pre-packaged bruschetta sauce
1 container crumbled fat-free feta cheese
1 handful basil leaves, chopped

Directions
Combine all ingredients in a bowl. Serve chilled with light crackers, multi-grain bread or crunchy vegetables such as celery, carrots and bell pepper.
