Tacos for breakfast

You've heard of fish tacos, veggie tacos and ice cream tacos, so why not breakfast tacos? With fewer calories than a breakfast burrito and more flavor than plain eggs, these mix-and-match options will kick-start your day with tasty and healthful ingredients.

Breakfast Tacos

Combine low-fat cheddar or Jack cheese with black beans, or feta with spinach — or skip the optional toppings and go bare.
Yields 4 tacos

Ingredients

2 large eggs (or 4 egg whites, for a healthier version)
4 corn tortillas
1/4 cup low-fat cheddar, Jack or feta cheese (optional)
1/2 cup spinach (optional)
1/2 cup low-sodium black beans (optional)
1/2 cup fresh salsa
1 avocado
Salt and pepper, to taste
Hot sauce, to taste

Directions

Spray a light layer of olive or canola oil in a frying pan. Beat eggs or egg whites in a small bowl, add salt and pepper to taste. Cook eggs over medium heat for 3 to 4 minutes, folding in cheese, beans or spinach if desired. Warm tortillas and fill with egg, top with salsa, hot sauce and avocado.
