This recipe is just the thing to keep your taste buds smiling and your waistline in check. Try this light, summery treat for lunch, as a starter before your main dish, or as a refreshing snack. You’ll not only enjoy the medley of sweet and tangy flavors, but also the fact that this dish is loaded with vitamin C — an antioxidant that contributes to healthy cell growth.
Ingredients
Salad Dressing
- 1 1/2 tablespoons olive oil
- 2 tablespoons raspberry vinegar
- 1 teaspoon grated lime peel
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh chopped basil leaves
- 1/2 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Salad
- 1 10-ounce package mixed baby greens
- 4 kiwi, peeled and sliced in half rounds
- 4 grapefruit, sectioned
- 2 cups sliced strawberries
- 2 star fruits, sliced
- 1/2 ripe avocado, seeded and peeled (1/2 sliced into 8 portions, into 1/2-inch cubes)
Directions
Salad Dressing
In a small bowl, whisk together all ingredients, set aside.
Salad
In a large salad bowl, combine baby greens, kiwi, grapefruit, strawberries and star fruit. Pour on dressing and toss to coat. Top with avocado slices.
