Sharp Coronado Hospital is cooking up something special for its patients.
As each patient is discharged from Sharp Coronado Hospital, they receive a miniature loaf of banana bread, homemade and baked especially for them. This little piece of edible comfort is just another example of how the Sharp Experience continues for each patient.
Try Sharp Coronado's banana bread recipe on your own and share your baking with a friend or loved one.
Ingredients
- 1 cup butter spread
- 2 cups sugar
- 7 large ripe bananas, mashed
- 1 tablespoon lemon juice
- 4 eggs, slightly beaten
- 3 cups flour
- 1/2 teaspoon salt
Directions
Mix softened margarine and sugar. Mix mashed bananas with lemon juice. Blend the margarine mixture with the banana mixture. Add eggs. Whisk together the flour and salt. Add to banana mixture and mix until just combined. Pour into two greased 9x5-inch loaf pans. Bake at 350 degrees Fahrenheit. Check on the bread after 35 minutes (it may take up to 45 minutes).
Banana bread is done when a toothpick inserted in the middle comes out clean. Cool bread in the pan for 10 minutes and then transfer to a wire rack to cool completely.
Makes two loaves.
