Black Bean Salad

This easy salad is full of flavor and fiber and perfect for a light lunch or side dish.

Ingredients

  • 2 cups canned black beans (rinsed and drained)
  • 1/2 cup chopped jicama
  • 1/2 cup chopped red bell pepper
  • 1/2 cup frozen white corn (thawed)
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped onion
  • 1/4 cup olive oil
  • Juice of one lime (or more lime juice if desired)
  • Salt and pepper to taste

Directions
Mix all ingredients together and serve.
