This easy salad is full of flavor and fiber and perfect for a light lunch or side dish.
Ingredients

2 cups canned black beans (rinsed and drained)

1/2 cup chopped jicama

1/2 cup chopped red bell pepper

1/2 cup frozen white corn (thawed)

1/2 cup chopped cilantro

1/2 cup chopped onion

1/4 cup olive oil

Juice of one lime (or more lime juice if desired)

Salt and pepper to taste
