What's better than dessert for breakfast? Dessert for breakfast that is as delicious as it is healthy and full of protein, fiber, antioxidants, vitamins and amino acids. Even better, this breakfast doubles as a nutrient-packed snack.
- 1 cup organic brown rice
- 1 cup organic quinoa
- 6 cups water
- 4 figs, sliced
- 2 ripe bananas, sliced
- 2 cups almond or soy milk
- 6 dates
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon
- 2 tablespoon ground flaxseed
- 2 tablespoon nutritional yeast
- Berries or other fruit for topping
- Nuts for topping
- Stevia or other natural sweetener to taste
In a medium saucepan, combine rice, quinoa and water. Bring to a boil, then simmer for 30 minutes, stirring occasionally.
Add figs and bananas once rice mixture reaches a boil, then reduce to a simmer for 30 minutes.
In a blender, add milk, dates, vanilla extract, sea salt and cinnamon. Blend until smooth. Add to the rice mixture. Stir in flaxseed and nutritional yeast. Mix well and simmer for another 15 minutes or until creamy.
Add fruit and nut toppings as desired.
Per serving: 132 calories, 2 grams fat, 64 milligrams sodium, 25 milligrams carbohydrates, 3 grams fiber, 5 grams protein.
