Wake up with a bowl of chia seed pudding, which offers the many nutritional benefits of chia seeds, including the ability to improve blood pressure in people with diabetes and increase HDL (good) cholesterol while lowering LDL (bad) cholesterol. In addition, the berries in this recipe offer an abundance of disease-fighting antioxidants and the soy milk contains compounds that provide energy.
- 2 cups organic, non-genetically modified (GMO) soy milk
- 1 tablespoon Stevia or other sweetener
- 1 teaspoon vanilla
- 1/2 cup chia seeds
- 2 tablespoons strawberries, sliced
- 2 tablespoons blueberries
Mix together the soy milk, Stevia and vanilla. Stir in the chia seeds until well mixed and allow to set for three hours or overnight. When ready to eat, garnish with berries or other favorite fruit.
Makes 3 servings.
Per serving: 194 calories, 10 grams fat, 17 grams carbohydrates, 10 grams fiber, 9 grams protein
