This entrée is full of flavor and packed with nutrients. It's also friendly for people with diabetes and takes less than 30 minutes to prepare.
Ingredients
- 1/3 cup orange juice
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Sichuan sauce
- 2 teaspoons cornstarch
- 1 tablespoon canola oil
- 1 pound boneless chicken breast, cut into 1-inch cubes
- 2 cups frozen broccoli florets
- 1 6-ounce package frozen snow peas
- 2 cups shredded cabbage
- 2 cups cooked brown rice
- 1 tablespoon sesame seeds (optional)
Directions
Mix orange juice, soy sauce, Sichuan sauce and cornstarch in a small bowl. Set aside. Heat oil in wok and add chicken. Stir-fry for 5 to 7 minutes. Add broccoli, snow peas, cabbage and sauce mixture. Cook for about 5 minutes until vegetables are heated through. Serve over brown rice. Sprinkle with sesame seeds.
