  Glazed Sweet Potatoes
Warm up with this delicious recipe, full of vitamin A and perfect for fall.
  • 1 pound sweet potatoes, peeled and cut into 1/2 inch-thick slices
  • Vegetable cooking spray
  • 1 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 3/4 cup unsweetened orange juice
  • 2 tablespoons lemon juice

Spray a 1-quart casserole dish with cooking spray and place sweet potato slices in the bottom. Combine cornstarch and brown sugar in a small bowl and add orange and lemon juices, stirring well. Pour over potatoes and cover and bake at 425 for 40 minutes or until potatoes are tender and glaze is thickened.
