Bruschetta offers many of the health benefits that are common with all Mediterranean dishes: high in antioxidants, fiber and good, monounsaturated fats. These nutrients are found in the many fresh ingredients that are typical of Mediterranean diets and help prevent many diseases such as cancer and heart disease.
Simple to prepare, this recipe features lentils, which provide an extra boost of fiber to your diet. Enjoy this dish with multigrain bread or crackers as a healthy appetizer, snack or light lunch.
Ingredients
- 1 package steamed lentils
- 1 container bruschetta sauce
- 1 container crumbled fat-free feta cheese
- 1 handful basil leaves, chopped
- 2 boxes pita crackers
Directions
Combine all ingredients but the crackers in a bowl. Serve with the pita crackers.
