Mediterranean Bean Salad

A healthy diet is key to a healthy heart. Lynne Schatzlein, RD, a dietitian affiliated with Sharp Chula Vista, offers the following recipe that is not only delicious, but also nutritious — and heart-healthy.

Mediterranean Bean Salad

  • 4 teaspoons balsamic vinegar
  • 4 teaspoons light soy water
  • 1 teaspoons yellow mustard
  • 1 tablespoon lemon peel, grated
  • 2 tablespoons lemon juice
  • 1 can black beans, drained
  • 1 can red kidney beans, drained
  • 1 can garbanzo beans, drained
  • 1 cup parsley, chopped
  • 1 cup carrots, grated
  • 1 red bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 red tomatoes, diced

Mix the dressing (vinegar, soy water, mustard, lemon peel and lemon juice) in the bottom of a large bowl. Drain the beans and add to the dressing. Prepare and add the other vegetables. Allow some time for it to marinate before serving.

Serves 12.
