Orzo is a rice-shaped pasta, typically served in soups and casseroles. Combined with lean turkey and vegetables like tomatoes and bell pepper — which are excellent sources of vitamin C — this dish will leave you feeling high on energy and on health.
Ingredients
- 1 pound ground turkey
- 2 cups canned, crushed tomato
- 1 cup diced onion
- 1/2 cup orzo pasta, uncooked
- 1 cup water
- 1 cup chopped green bell pepper
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon chili powder
- 1/8 teaspoon hot sauce
- 1 16-ounce can pinto beans, rinsed and drained
Directions
Cook ground turkey in a large skillet over medium heat, stirring occasionally, until browned. Drain. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 15 minutes, stirring frequently until pasta is tender.
Serves 4.
