Papaya Pineapple Salsa

This delicious salsa is a colorful combination of tropical fruits and vegetables. Serve over grilled fish, on green salad or with pita chips.

Ingredients

  • 3/4 cup diced ripe papaya
  • 3/4 cup diced fresh pineapple
  • 1/2 cup diced jicama
  • 3 tablespoons chopped red onion
  • 1 chili pepper, Serrano or jalapeño
  • 1 garlic clove, minced
  • 2 teaspoons lime zest
  • 2 tablespoons fresh lime juice 
  • 1 tablespoons minced cilantro

Directions
Combine papaya, pineapple, jicama, red onion, chili pepper, garlic, lime juice and zest and cilantro. Cover and refrigerate until ready to serve.
