Red Pepper Frittata

This delicious frittata incorporates vegetables and protein and is the perfect way to start your morning off right or to end your day with dinner.

Ingredients

  • 2 teaspoons olive oil, divided
  • 2 red bell peppers, chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 2 garlic cloves, minced
  • 2 cups egg substitute
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1/2 teaspoon dried oregano
  • Freshly ground black pepper, to taste
  • 1 tablespoon grated Parmesan cheese

Directions
In a large, ovenproof frying pan over medium heat, warm 1 teaspoon oil. Add the red peppers, celery, onions and garlic; cook, stirring frequently, for four to five minutes or until tender. Remove from heat and set aside. In a large bowl, lightly whisk the egg substitute, parsley, oregano and black pepper. Stir in the vegetable mixture. In the same frying pan over medium heat, warm the remaining 1 teaspoon oil. Add the egg mixture and cool until brown around the edges. Cover the pan and reduce heat to low. Cool for three to four minutes, or until the eggs are set. Meanwhile, preheat the broiler. Sprinkle the frittata with cheese. Place the pan about 5 inches from the heat and broil for 1 to 2 minutes, or until golden brown. Serve cut into wedges.
