Shrimp Skewers

This delicious dish is perfect for a summer evening and is packed with tasty veggies. Serve with a baked potato on the side.

Ingredients

  • 1 pound shrimp
  • 1 cup chopped zucchini
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 1/2 cup fat-free Italian dressing
  • 1/3 cup lemon juice
  • 1/4 cup minced garlic

Directions
Alternate shrimp and vegetables on a barbecue skewer and place on the grill. Braise often during grill time with a mixture of the Italian dressing, lemon juice and minced garlic.

Serves 5 (two skewers per serving).

For an even tastier treat, toss a six-ounce potato in tin foil on the coals of the grill. Once done, top with fat-free sour cream and salsa for a meal that’s under 400 calories!
