This heart-healthy dish uses fresh herbs and lemon for brightness and flavor. Broccoli and cauliflower offer an abundance of vitamin C.
- 2 cups broccoli, cut into florets
- ½ small head cauliflower, cut into florets
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 2 teaspoons fresh parsley, chopped
Steam broccoli and cauliflower until tender, about 10 minutes. In a small saucepan, mix the lemon juice, oil and garlic. Cook over low heat for two or three minutes. Put the vegetables into a serving dish. Pour the lemon sauce over the vegetables. Garnish with parsley.
Makes 4 servings.
Serving size: 1/2 of recipe. 22 calories, 2 grams carbohydrates, 2 grams total fat, 0 milligrams cholesterol, 1 gram saturated fat, 1 grams dietary fiber ,7 milligrams sodium, 1 gram protein.
