Meet the Dietitian: Carolyn Mitchell
Carolyn Mitchell earned her bachelor of science degree from California Polytechnic State University, San Luis Obispo. She completed her dietetic internship at the La Jolla Veteran's Administration Medical Center.
She has been working at Sharp hospitals ever since, providing medical nutrition therapy and nutrition counseling to patients and clients. Carolyn treats her patients using patient-centered nutritional care, focusing on each patient's individual nutritional goals to develop a healthy living plan.
Carolyn recently received a certificate of training in weight management from the Academy of Nutrition and Dietetics. She completed advanced training in integrative wellness and nutrition through the University of Arizona Center of Integrative Medicine.
In her free time Carolyn enjoys surfing, yoga, crocheting and making jewelry.
Why did you become a registered dietitian?
My interest in nutrition began in high school at a time when I wanted to lose weight. I learned a bit about moderating calories, behavior modification and keeping food records, which was successful for me to manage my weight. I'm very fortunate that my love for nutrition continues and I enjoy sharing my knowledge with those admitted to the hospital, as well as to those seeking education in the outpatient setting.
What are your specialties and interests as a dietitian?
I work in the intensive care and medical surgical units at Sharp Coronado Hospital providing nutrition support expertise for those patients who aren't able to eat. I also provide nutrition counseling to patients admitted into the hospital and to clients needing education in the outpatient setting. I have a unique opportunity, through the Personalized Nutrition and Fitness Program, to conduct a metabolic rate test to assess each individual's caloric needs and to determine an individualized weight-loss plan for that client.
What is the most rewarding part of your job?
Staying current with nutritional research and providing this information to patients is one of the most rewarding parts of my job. I love educating patients and clients about nutrition and seeing the positive changes they make that translate into overall better health.
