Avocado toast 3 ways (recipe)

There are 20 wonderful essential nutrients in every avocado, and its "superfruit" superpowers can help protect your heart and lower your cholesterol.

But health benefits aside, avocados taste great and are fun to eat. They also make a great replacement for cheese or salad dressing, and with a little creativity, they can dress up drab toast in an endless variety of ways. Here are three of our favorite avocado toast recipes.

Mexican Avocado Toast

Spice it up with a drizzle of your favorite hot sauce.
Yields 2 servings

Ingredients
2 slices multigrain bread, toasted
1 avocado, mashed
1/4 cup corn, fresh or canned
1/4 cup cotija cheese, finely grated
1/4 cup fresh cilantro, chopped
1 lime

Directions
Coat a small pan with cooking spray. Over medium heat, grill the corn until lightly blackened; set aside. Spread mashed avocado evenly on both pieces of toast. Sprinkle cheese and cilantro on the avocado. Divide corn evenly on top. Finish off with a small squeeze of lime juice.

Breakfast Avocado Toast

Not a hard-boiled egg fan? Try poached eggs for gooey goodness.
Yields 2 servings

Ingredients
2 slices multigrain bread, toasted
2 eggs, hard-boiled and sliced
1 beet, julienned
Salt and pepper, to taste

Directions
Spread mashed avocado evenly on both pieces of toast. Layer egg slices on top of the avocado, followed by the beets. Sprinkle with salt and pepper.

Smoked Salmon Avocado Toast

Skip the cream cheese and try this wholesome spread.
Yields 2 servings

Ingredients
2 slices rye bread, toasted
2 slices smoked salmon
1/4 cup capers
1/4 teaspoon freshly cracked black pepper

Directions
Spread mashed avocado evenly on both pieces of toast. Layer smoked salmon on top of the avocado, followed by the capers. Sprinkle with pepper.
