Black Bean Brownies
These gluten-free treats pack a powerful protein punch.
Yields 12 servings
1 (15-ounce) can black beans, drained and rinsed
3 egg whites
1 tablespoon canola oil
1/4 cup unsweetened cocoa powder
1/2 cup maple syrup, honey or agave nectar
1/2 teaspoon baking powder
2 teaspoons vanilla extract
1/2 cup chocolate chips
Heat oven to 350° F and lightly grease an 8x8-inch baking pan. Blend all ingredients except the chocolate chips in a food processor or blender until the batter reaches a smooth consistency.
Fold in chocolate chips and pour into the baking pan. Bake for 15 to 20 minutes or until a toothpick comes out clean.
