Coconut Chia Pudding With Mango
Yields 8 servings
1 (14-ounce) can coconut milk
1/4 cup chia seeds
1/2 teaspoon vanilla
1/2 cup (plus 2 teaspoons) orange juice
2 teaspoons finely grated lime zest
2 tablespoons lime juice
2 tablespoons raw honey
1 pound mango, peeled and sliced into 1/2-inch cubes
1 teaspoon toasted and grated coconut
Ground cinnamon, to taste
Fresh mint, to garnish
In a medium bowl, mix coconut milk, chia seeds, vanilla and orange juice. Cover and store in the refrigerator overnight.
The next day, in a blender, puree the mixture until thick. Pour into a bowl, and mix in lime zest, lime juice and honey.
Spoon pudding into 8 small bowls or glasses (3 ounces each). Top each pudding with 2 ounces of sliced mango, and sprinkle with coconut, cinnamon and mint.
