’Tis the season for indulging in holiday goodies. Whether your plate is filled with savory or sweet treats, they don’t necessarily have to be high in calories or fat.
Dark Chocolate and Peppermint Truffles
Replace crushed peppermint candies with shredded coconut or chopped nuts for a slightly different flavor.
Yields 30 truffles
6 ripe avocados
2 teaspoons vanilla extract
2 teaspoons raw honey
10 ounces chocolate chips (65% cacao)
1/2 cup peppermint candies, crushed
Crush peppermint candies and set aside. Remove avocado skin and pit. Roughly chop avocados, then use a hand mixer to puree. Using a double boiler, melt the chocolate. Once melted, mix in vanilla and honey, then fold in avocado.
Chill mixture in the refrigerator for at least 30 minutes, or until it becomes thick enough to scoop into balls. Using an ice cream scoop or your hands, form 1-ounce balls. Roll each ball in crushed peppermint candies and place on a sheet pan lined with parchment paper. Refrigerate until ready to serve.
