HMR® Mexican Layered Salad
Yields 1 serving
1 HMR® Turkey Chili With Beans Entree
1 cup bell peppers, cut into strips (fresh or frozen)
1/4 cup salsa (no sugar added)
1/4 cup low-fat sour cream
3 cups lettuce, chopped
1/4 cup tomatoes, diced
1 (4-ounce) can roasted green chilies, chopped
In a large skillet over medium-high, heat 1 teaspoon of olive oil. Once hot, add the bell pepper strips and saute until soft. In a large bowl, mix the turkey chili entree and the cooked peppers (heat if desired).
In a separate bowl, mix the salsa and sour cream. To serve, layer the ingredients in the following order: lettuce; turkey chili and bell peppers mixture; salsa and sour cream mixture; tomatoes. Sprinkle with chopped green chilies.
