HMR Spaghetti Squash Ravioli
Yields 1 serving

2 cups (1 small) spaghetti squash
1 red bell pepper, chopped
1/2 cup mushrooms, sliced
1/4 cup onion, chopped
1 teaspoon garlic, minced
Salt and pepper, to taste
1 HMR Cheese and Basil Ravioli Entree
Cut spaghetti squash in half lengthwise and remove the seeds. Place squash in the bottom of a microwave-safe dish, cut side down, with 2 tablespoons water. Microwave for 12 minutes or until the squash is tender and can be easily removed from its skin with a fork.
While the squash cooks, add the bell pepper, mushrooms, onion and garlic to a nonstick pan. Heat over medium-low and sauté until tender.
When the squash is done, use a fork to scoop out the strands. Add 2 cups of squash to the pan with the vegetables. Add the HMR Cheese and Basil Ravioli Entree to the pan and continue cooking on low heat for another 2 to 3 minutes.
Serve on a plate or in the hollowed-out spaghetti squash shell.
