Extend your decorating spirit from your front door to your holiday table with this caprese salad in the shape of a festive wreath.
Holiday Caprese Salad Wreath
Yields 8 servings
1 cup balsamic vinegar
14 ounces fresh mozzarella balls
14 ounces grape tomatoes
4 tablespoons olive oil
1/2 teaspoon dried basil
4 handfuls fresh basil leaves
6 sprigs fresh rosemary
Salt and pepper to taste
In a small saucepan, heat balsamic vinegar over medium until it boils. Reduce to low, and continue to cook until the vinegar becomes the consistency of syrup (approximately 10 to 15 minutes).
In a medium bowl, toss the mozzarella balls, grape tomatoes and dried basil together with the olive oil.
Layer the bottom of a serving platter with the fresh basil leaves. Pour the balsamic reduction into a cup or small bowl, and place it in the center of the platter. Spoon the mozzarella mixture around the cup or bowl. Remove rosemary leaves from sprigs, and sprinkle on top of the mozzarella mixture.
Use toothpicks or bamboo skewers to serve.
