How to chiffonade fresh herbs (video)

There are many ways to prepare fresh herbs as an ingredient or dish topper: you can chop, slice, dice or muddle, to name a few. In this video, Chef Larry Banares, formerly of Sharp Grossmont Hospital, shares his favorite technique: the chiffonade. The French term literally means, “made of rags,” to recognize the long strips of basil or other leafy herbs that result from this rolling and mincing process.
