No-Bake Key Lime Pie
This healthier take on a warm-weather classic clocks in at less than 200 calories a slice.
Yields 8 servings
2 tablespoons cold water
1 tablespoon fresh lime juice
1 1/2 teaspoons unflavored gelatin
4 ounces (half of an 8-ounce block) fat-free cream cheese, softened
3 single-serving containers light Key lime pie flavored yogurt (Greek or regular)
1/2 cup fat-free whipped topping
2 teaspoons freshly grated lime zest
1 premade, reduced-fat graham cracker crust
In a 1-quart saucepan, mix cold water and fresh lime juice. Sprinkle unflavored gelatin in lime juice mixture; let stand for 1 minute. Stir constantly over low heat until gelatin dissolves. Cool slightly, about 2 minutes.
In a medium bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Add yogurt and lime juice mixture; beat on low speed until well-blended.
Fold in whipped topping and lime zest. Pour into crust. Refrigerate until it sets, about 2 hours.
