The holidays inspire many of us to bake sweet treats to share with family, friends and co-workers. However, just because you are included in a cookie exchange this holiday season, doesn’t mean that you have to load up on the butter and sugar.
The best part of this delicious and healthy cookie recipe? There is no need to power up the oven. Enjoy making these cookies in under 15 minutes, then store them in the fridge until it’s time to share.
No-Bake Peanut Butter Chocolate Cookies
Yields 14 (2-inch) or 28 (1-inch) cookies
1 cup all-natural peanut butter or almond butter
6 tablespoons organic, unsweetened cocoa powder
1/2 cup coconut oil or unsalted butter
1/3 cup maple syrup or honey
2 teaspoons vanilla extract
2 cups quick oats
1/4 cup shredded coconut (optional)
1 tablespoon cinnamon (optional)
In a saucepan over low heat, combine the nut butter, cocoa powder and coconut oil (or butter) until melting. Remove from heat and stir in the maple syrup (or honey) and vanilla. Add the oats and combine well. Add optional coconut or cinnamon, if desired.
When the mixture is at the preferred consistency and taste, scoop a small spoonful onto a parchment-lined baking sheet. Once the scoops have cooled down, flatten into the round shape of a cookie.
Store cookies in a sealed container in a cool place or the fridge. Share and enjoy.
