Zucchini is a hearty squash that’s readily available year-round, making it a good choice for simple side dishes. This savory recipe from Sharp HealthCare’s employee wellness program, Sharp Best Health, is simple to prepare and goes well with lean proteins and whole grains, the staples of a heart-healthy Mediterranean diet.
Garlic, lemon and Parmesan take this dish from drab to fab.
Yields 4 servings
1 1/2 pounds zucchini (about 4 to 5 small or medium ones)
2 tablespoons extra-virgin olive oil
1 teaspoon lemon zest (about 1 small lemon)
2 cloves garlic, crushed or finely minced
3/4 cup Parmesan cheese, finely shredded
Freshly ground black pepper and salt-free seasoning
Heat oven to 350° F. Line a rimmed cookie sheet with aluminum foil.
Cut zucchini into 1/2-inch slices. Set aside.
In a small bowl, stir together olive oil, lemon zest and garlic.
Evenly spread zucchini slices on the prepared baking sheet. Brush olive oil mixture on top of zucchini, distributing some of the garlic/lemon zest on each slice. Sprinkle with Parmesan cheese. Season lightly with pepper and any desired salt-free seasoning.
Bake for 11 to 13 minutes, then adjust oven rack and broil for several minutes until cheese is golden brown. Serve warm and enjoy.
