Yields 18 to 24 servings
6 slices of prosciutto*
1 tablespoon balsamic vinegar
1 tablespoon fresh mint, chopped
Prepare melon by cutting in half and scooping out the seeds. Use a melon baller to create spheres or remove rind and cut melon into cubes. Slice prosciutto lengthwise into large enough strips to wrap around melon pieces. Place on a serving plate and drizzle with balsamic vinegar. Sprinkle with fresh mint. Chill before serving.
