Sharp cafeterias launch nutrient-dense menu

We know how important it is, each day, to feed our bodies, our minds and our souls. But to nourish is to do all three, and then some.

Nourish is the name of a new menu program by Sodexo — the food and nutrition provider for Sharp HealthCare — piloted in the Mindful Café at Sharp Coronado Hospital, and rolling out across the Sharp system in 2018.

The program is based upon detailed study of the nutrient-dense diets of people living in the “blue zones” of the world — like Loma Linda, California; Okinawa, Japan; and Sardinia, Italy — where many live healthily to age 100 and beyond. Nourish focuses on what nutritionists refer to as “culinary genomics.” It involves food that provides not just energy, but also the bioactive compounds, vitamins, antioxidants, minerals and good fats, as well as pre- and probiotics necessary for good health and wellness.

“These are foods that talk to our bodies on a cellular level, triggering genes that aid in longevity and good health. It’s the first menu in the nation inspired by culinary genomics,” says Manisha Desai, general manager for food and nutrition at Sharp Coronado. “Nourish offers uniquely delicious dishes to help people on their quest to live well."

The menu was developed after lengthy tests in the kitchen by the Sharp executive chefs, and introduced to the Café in January. It includes a two-week rotation of entrées, all freshly made in front of the diner. And so far, they’ve been very successful.

“Our customers are giving us very positive feedback,” says Desai. “Sales of meals were up 17 percent year-to-year in January, and 12 percent in February.”

From its start at Sharp Coronado, Nourish has been rolled out throughout the system the past four months. Currently, the selection of the day is available for lunch and dinner, but plans call for development of a breakfast menu as well. Nourish meals will also be added to patient menus in the future, as a supplement to the Mindful Menu already offered to patients at Sharp hospitals.
