Each spring, employees at Sharp HealthCare participate in a friendly chili cook-off as part of our organization’s support of the annual American Heart Association Heart & Stroke Walk. This light, heart-healthy chili from Sharp Mary Birch Hospital for Women & Newborns won first place in the Critic’s Choice category, and is a perfect addition to a summer potluck or picnic.
Spicy Turkey Chili
Prep time: 20 minutes / Cook time: 8 hours / Total time: 8 hours and 20 minutes
Yields 4 to 6 servings
1 package ground turkey*, browned and drained
28-ounce can chunky tomatoes
15-ounce can red kidney beans, drained
15-ounce can pinto beans, drained
6-ounce can tomato paste
1 small onion, diced
1 green pepper, diced
1 to 2 cloves of garlic, diced
1/2 teaspoon crushed red pepper flakes
1 1/2 to 2 tablespoons chili powder
1 teaspoon ground cumin
Salt, pepper, cayenne pepper and Sriracha sauce to taste
*To lower the fat content and calories, use ground turkey breast.
Sauté onions, garlic and green bell pepper until soft. Transfer to a slow cooker. Brown ground turkey, drain and add it to the slow cooker. Add the remaining ingredients; cover and cook on low for at least 8 hours. Add salt, pepper, cayenne pepper and Sriracha sauce to taste. For additional flavor, top with fresh cilantro, green onion, a small amount of shredded cheese and fresh avocado.
