Sweet potato pie (recipe)

Looking for something new to put on the dessert table this holiday season? Consider sweet potato pie. Although they look similar, sweet potato pie is lighter and sweeter than its dense, zippy rival, pumpkin pie.

This simple recipe from the Centers for Disease Control and Prevention (CDC) will stand out as the centerpiece of your holiday table.

Sweet Potato Pie
This heart-healthy pie is a great alternative to pumpkin.
Yields 16 servings

1 1/4 cups flour
1/4 teaspoon sugar
1/3 cup skim milk
2 tablespoons vegetable oil

1/4 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 large eggs, beaten
1/4 cup evaporated skim milk
1 teaspoon vanilla extract
3 cups sweet potatoes (cooked and mashed)

Heat oven to 350° F.

Prepare the crust: In a large bowl, combine the flour and sugar. Add milk and oil; stir with fork until well mixed. Then form mixture into a smooth ball with your hands. Using a rolling pin, roll out the dough between 2 (12-inch) squares of waxed paper, using short, brisk strokes until dough is evenly flat and reaches edge of paper. Peel off top paper and invert dough circle into pie plate. Remove remaining paper.

Prepare the filling: In a large bowl, combine sugars, salt, spices and eggs. Add milk and vanilla; stir. Add sweet potatoes and mix well. Pour mixture into pie shell.

Bake for 60 minutes or until crust is golden brown. Cool and cut into 16 slices.
